This recipe for gluten free granola is healthy, so simple to make and comes together in less than 30 minutes! Enjoy on its own or sprinkled on yoghurt, oatmeal or fruit!
Raise your hand if you love granola!
As far as I’m concerned, granola is the ultimate breakfast. The sweetness of dried fruit, when paired with nuts, seeds and toasted oats are the perfect combo. I like to enjoy my granola as a cereal with milk, but it also makes for a great topping to any yoghurt or fruit bowl.
Granola is a breakfast cereal and toasted mixture which typically consists of rolled oats, nuts, and a sweetener like sugar or honey. It can also include other grains such as puffed rice, dried fruit, seeds and spices.
This homemade gluten free granola tastes just as good, if not better than the original! While it is healthier than the store-bought version, it still contains all the good things you would expect from a typical granola, just without all the refined sugars.
If you love granola, I’m confident you’ll love this recipe.
Why you’ll love this recipe
- It’s a healthier alternative to store bought granola. You won’t find any refined sugars in this recipe!
- It requires minimal preparation and comes together in less than 30 minutes!
- It’s versatile! I use a combination of pumpkin, sunflower and flaxseeds and cranberries, but you can use whatever nuts or dried fruits you like and make it your own!
Ingredients you’ll need
- Gluten-Free rolled oats. The key element to getting granola clusters!
- Pumpkin, sunflower and flaxseeds. Linseeds also work well as a substitute here for flaxseeds.
- Almonds. If you don’t have these, any other nuts will work well here (ie pecans, walnuts, cashews etc).
- Dried fruit. I used cranberries here as they give a lovely sweetness but other dried fruits such as apricots are also great substitutes.
- Coconut flakes. Totally optional add in!
- Extra-virgin olive oil.
- Maple syrup (or honey).
How to make the best homemade granola
Pre-heat the oven to 180 degrees celcius (fan forced) and line a 14 x 10 inch tray with baking paper.
Add all the dry ingredients except for the coconut flakes and cranberries to a medium bowl and stir until just combined. Add the wet ingredients to the dry ingredients and using a spoon, mix it all together until the mixture is coated evenly.
Using a large spoon, scoop the mixture onto the baking tray and spread evenly to the edges. If you like your granola to have ‘clusters’, press the granola gently with the back of the spoon.
Place in the oven and cook for 20-25 minutes or until golden brown. Then once the granola is lightly toasted, remove from the oven and set aside to cool completely. Do not skip this step! Patience is key here for the best granola clusters! The granola will harden and form clumps in the pan as it cools.
Serve with coconut flakes and cranberries!
